Aurora Salad

For this salad it is best to make yourself your own refreshing sauce – Tzatziki Sauce.


Ingredients

  • 500 Grams
    Turkey breasts
  • 5 Tablespoons
    Olive oil
  • 1 Pinch
    Salt (you can sprinkle with thyme, garlic, chili, origano, depending on your wish)
  • Fresh vegetables: rucola, fresh cabbage , onions , red pepper, tomatoes, green salad
  • 4 Pieces
    Medium carrots
  • 3 Tablespoons
    Sunflower seeds
  • Tzatziki sauce

Instructions

  1. Put some Olive oil or butter in a large grill pan or a cast iron skillet and preheat it until it is very hot.
    Cut the turkey breasts into thin rods and carefully place them into the preheated pan.
    Add any additional fresh or dried spices. The outside of the meat should be nicely browned.
    Next, take the meat out of the pan and put it on medium heat and add some more oil - if needed - to saute some carrots.
    For this step u simply use a vegetable peeler and make thin strips of carrots directly over the pan so they fall inside.
    If you like - it's my advice of taste to do so - add some sunflower Seeds into the pan when frying the carrots.

    Cut up some fresh vegetables - that you like most - into long thin sticks. My selection would be: fresh cabbage, rucola, onions , red pepper, tomatoes and green salad.

    Mix the carrots and sunflower seeds together with the turkey strips, place it over your vegetable selection and top it with the tzatziki sauce.
