Pour in the tomato sauce, followed by a splash of water to adjust the consistency.
Cover the pot, reduce the heat to low, and let the sauce simmer for about 30 minutes. Occasional stirring is recommended.Prepare the Vegetable Pasta:
Use a spiral cutter or julienne peeler to shape the remaining zucchini (and additional carrots if desired) into pasta-like strands.
In a skillet, heat some olive oil. Begin by sautéing the carrot strands until they're soft. Next, add the zucchini strands and continue sautéing until both vegetables are tender but still have a bite.Combine and Serve:
Pour the bolognese sauce over the zucchini and carrot pasta. Gently mix to ensure the vegetable pasta is thoroughly coated with the sauce.
