Crepes or Pancakes with grate zucchini

When the crepes are finished, you can spread them with cream cheese, tzatziki or if you like it fresh with this vegetable mix! 🙂


Ingredients

  • 1 Piece
    Medium zucchini
  • 1 Piece
    Egg
  • 150 Grams
    Spelt flour
  • 1 Pinch
    Salt
  • 150 Millilitres
    Water

Instructions

  1. Break the egg into a bowl, put water and the spelt flour to it and season it with salt according to your taste.
    Whisk everything together until it becomes smooth and grate some zucchinis into it.

    Use a crepe pan or an 8-inch nonstick skillet.
    Heat it up until it is very hot and spread some olive oil or butter evenly.
    Pour some batter on three or four places into the pan to and make some 0.1 - 0.2 inch thick pancakes on it.

    You can and should now reduce the heat to medium!

    Cook the crepe until every center appears dry and edges are lightly browned.
    Turn it and cook an additional on the other side.

    Repeat this process for the remained batter to prepare some more pancakes.

    When done, top them with whatever you like most ... let your imagination be the guide! :)
