Crispy Fried zucchini

Ingredients

  • 2 Pieces
    Medium zucchini
  • 2 Pieces
    Eggs
  • 60 Grams
    Spelt flour
  • 60 Grams
    Oatmeal, or parmesan, or seeds, bread crumbs
  • Salt, chili, oregano, garlic powder

Instructions

  1. Wash and cut the zucchini into thin slices or strips.

    Combine flour with your spices on a plate.
    Beat the egg in a bowl.
    Put the oatmeal (or plain dry bread crumbs, seeds or parmesan) in an additional plate.

    Dredge the slices of zucchini in flour, dip each floured zucchini into the beaten eggs and finally press the zucchini slices gently into the oatmeal.
    Repeat these steps for every slice of zucchini.

    For the final step, you can use either a pan or your oven.

    Preheat a pan with olive oil and fry the prepared slices in it.
    They are done when the slices become golden brown of color.

    Preheat the oven to 200 degrees Celsius.

    Coat the baking tray with a baking sheet or cooking spray.
    Place the zucchini single layered on the prepared baking tray.

    Bake the zucchini slices until browned and crisp, about 25 to 30 minutes.
