Filled vegetables with a “Bolognese sauce”

I know you love vegetables, but when you’re also into bolognese, then this recipe is your pick! 😉


Ingredients

  • 300 Grams
    Minced meat (I like turkey meat)
  • 2 Pieces
    Red paprika
  • 2 Pieces
    Zucchini
  • 1 Piece
    Medium onion
  • 4 Pieces
    Clove of garlic
  • 1 Piece
    Carrot
  • 350 Grams
    Tomato sauce
  • 10 Tablespoons
    Olive oil
  • 1 Pinch
    Salt, chili, oregano, garlic powder

Instructions

  1. Preheat your oven to about 200 degrees Celsius.

    Clean all the paprikas inside out, cut the zucchini in half lengthwise and scoop out the seeds.

    Place everything on a baking tray or bake bowl and season the vegetables with olive oil, oregano, chili, garlic powder and of course your favorites. ;)

    Put them for 15 minutes in the oven.

    Meanwhile, chop up the onion and garlic.
    Warm some olive oil in a large saucepan, and saute - over medium heat the onion first and then short the garlic.
    Add the minced meat (I like turkey meat) to it; when the meat is almost finished, grate some carrots in and pour the tomato sauce into it.
    If you have some left over zucchini from your scooping, then add it too.

    Season everything additionally according to your taste.
    Please don't forget to stir the meat and vegetables until everything is softened.

    Take the paprika and zucchini - if you haven't it done already - from the oven and fill them with this mix of meat and vegetables.

    Optionally: Add to the filling some cream cheese and Parmesan, over each filled paprika and zucchini to get a creamier taste.

    The last step is to put everything together for 5 minutes in the oven, just so the flavors combine with each other.
